Pathiri Fry

    
     This recipe is usually found in the high ranges of Kerala especially Idukki. In every small hotels they serve this for evening snack. The climate usually here is cool and the kids are always hungry, especially after school. So this recipe when served hot is very tasty and very filling too. Children would love it.


Supplies :-

  • A rolling pin and surface to roll out pathiris
  • A sieve spatula to flip and drain

Ingredients :-

1.   All purpose flour (Maida)       - 2 cups
2.   Semolina (Rawa)                 - 1 cup
3.   Salt                                   - a pinch
4.   Sugar                                 - 2 tsp
5.   Big Cumin seed (Jeera)         - 1tsp
6.   Boiled water                        - 3 cups
7.   Oil                                     - for frying



Preparation:-

Mix the first five ingredients in the mixing bowl and keep it aside.

Boil the water in a sauce pan and use it immediately to mix the ingredients in the bowl into medium firm dough with a spoon (It would  very hot).

Cover it and allow it to cool.


After cooling, knead your dough for about 15 minutes to make your dough soft.  Form a ball, cover your dough and let it rest.  Try to set aside the dough for at least 15 minutes (an hour or longer is better) before you need to cook your Pathiri.

  After the dough has rested separate it into small balls of dough ( Divide the dough into 4 inch radius balls.)




Lightly dust your surface with Maida to prepare for rolling.  Roll out each ball into a circular shape 1 inch thick and 4 inch diameter, adding a little flour if the dough begins to stick.Heat oil in the pan over medium high until it is hot. Put a pinch of dough in the oil to test the heat ( If the dough comes up very fast the oil is very hot reduce the heat. If it comes up very slowly then it’s the right heat.).




Take the rolled Pathiri and put it gently into the oil.  Cook on one side until you start to see bubbles.  Flip it and do the same until it becomes golden brown.
Take out the Pathiri with the sieve spatula and place it on a tissue paper. So that it would absorb excess oil. Now Your Pathiri is ready. You can serve it hot or cold for evening tiffin.

 PS :- Instead of Maida you can use wheat flour.
